My homemade nasi lemak sambal always tak jadi, either too sweet or not lazat. Tips?

I can cook the rice ok but the sambal always fail. Either too manis, or pucat colour and tak pekat. Kopitiam ones so shiny and dark red. What's the secret makcik-makcik use? Share your family recipe tips please.

One thing nobody mention, taste and adjust at the end. Sambal is about balance of pedas, masin, manis, masam. If too sweet add more asam jawa and salt. If flat add belacan. Cook a batch, taste, note what's off, fix next time. Took me like 5 tries. Also fry the ikan bilis and peanuts crispy separately, don't mix into wet sambal or it turns lembik. Good luck, once jadi you tak nak beli luar lagi.

My mak always say the colour comes from cili kering (dried chilli), the more you use the darker and richer. Fresh chilli alone gives spicy but pale. Soak the dried ones in hot water till soft then blend. And jangan takut minyak, sambal tumis needs generous oil to fry properly and to keep, less oil senang basi and won't shine. Store extra in fridge, actually more sedap next day.

The secret is patience and the onions. Real good sambal tumis needs you to caramelise a lot of sliced bawang besar (big onions) low and slow until sweet and jammy, that's where the natural sweetness and that dark glossy look comes from, not from dumping sugar. Steps that fixed mine: (1) Blend dried chillies (soaked) with fresh chillies for colour and kick, plus garlic and shallots. (2) Tumis the blended paste in enough oil on low heat for a long time, like 30-40 minutes, until pecah minyak (the oil separates and floats), this step people rush and that's why sambal pucat and raw tasting. (3) Add tamarind (asam jawa) juice for that tang, a pinch of belacan optional, and only a little gula melaka to balance, not to make it dessert. (4) Add the sliced onions and let them melt in. Salt to taste. Low heat, long time, pecah minyak, that's the whole game. Once you nail pecah minyak your sambal will look kopitiam standard.
